1 ½ oz Devils River Rye Whiskey
¾ oz freshly squeezed lemon juice from 1 lemon
½ oz maple syrup
1 very fresh egg white
Add rye, lemon, maple syrup, and egg white to a cocktail shaker. Dry shake (without ice) for 20 seconds to emulsify egg.
Add ice and shake hard for 10 seconds, until chilled.
Strain into a coupe, garnish with bitters, serve immediately.
