Thompson San Antonio Executive Chef, Dave Arciniega

Guest Chef: Jonathan Reyes

A proud member of the Chicano community with deep roots in the heart of San Antonio, Jonathan Reyes brings over 15 years of sushi craftsmanship to the table. A father and local culinary talent, Jonathan has worked with some of the best in the industry, including James Beard nominees and winners such as Chef Michael Sohocki, Chef Tyson Cole, and Chef Jay Haung, among others. Jonathan is himself a James Beard Foundation Semifinalist.

With a vision to combine indigenous Latin influences with the artistry of sushi, Jonathan’s culinary style is known as San Antokyo, a unique fusion that celebrates the rich Chicano heritage and Texas roots through bold, sensory-driven omakase experiences. His most recent creation, Chotto Micro Omakase, is an exclusive, reservation-only dining experience offering 10 courses inspired by the flavors of the land, from chapulines (seasoned crickets) to mesquite-smoked Japanese A5.

Through his dishes, Jonathan tells a story of culture, family, and culinary evolution, making each course a journey through his Chicano heritage, one bite at a time.

Guest Chef: Chef John Ramos

Chef John Ramos, a proud West side resident and culinary enthusiast, has spent nearly two decades perfecting his craft. After serving in the US Navy, Chef Ramos chose to pursue his passion for cooking, focusing on Japanese cuisine—a decision that has shaped his culinary journey.  John Ramos is also a James Beard Foundation Semifinalist.

His experience spans several esteemed establishments, including Benihana (Executive Chef), Atami Steak and Sushi (Bryan, Texas), and as a private chef in both San Antonio and Austin. Chef Ramos is also known for hosting community-focused pop-ups such as San Antokyo and Montana Street Sushi, often supporting charitable causes.

With a style that blends diverse cultural influences, Chef Ramos and his team are redefining San Antonio’s dining scene with their signature San Antokyo style—a fusion that showcases the city’s rich heritage while introducing a fresh, exciting experience to the culinary landscape.

Guest Chef: Chef Kirk

Born and raised in Laredo, Texas, Chef Jesse Kuykendall learned about authentic Mexican cuisine from his mother. He was professionally trained at San Antonio’s Culinary Institute of America and Oaxaca’s Season of My Heart Culinary School. Chef Kirk has been Ocho’s Executive Chef since 2019, bringing influence from his upbringing, travels and culinary studies to each and every dish.

Chef Kirk was the first San Antonio-based chef to win a national cooking series, besting the competition on an episode of “Chopped.” He competed in season 47, episode 13, of the Food Network show, which was themed around peanut butter and jelly. His winning mystery dishes included: hot dog quesadillas, 30-minute mole, and peanut butter churros. Chef Kirk also celebrates the heritage of overlooked Mexican street foods at his other endeavor, Milpa Food Truck and Catering.
